All in one single serve and pot of coffee maker
Any strong recommendations? Many I see have suspect reviews. Looking for recommendations from folks here. I don’t want a kureg type— just a normal coffee machine.

Don't do it. Making coffee is a multi-step process: grind the beans, heat the water, drip or pour the coffee over the beans. If any one of those features of your all-in-one machine fails, your expensive machine is totally useless. I would invest in a good quality burr grinder, and then get either a drip coffee machine or (better yet) a Chemex or Melitta carafe and pour the water over the grounds manually.

I recently broke my glass carafe, and I when I couldn't find a replacement, I repurchased the same coffee machine because it makes an excellent cup of coffee. I grind my beans and use the Zojirushi Zutto 5-cup coffeemaker. It's one of the few that can make just one cup.

This doesn't answer OP's question about one cup, although you can make a small amount if you want. But ...

I used a chemex for quite a while
(Chemex Classic Series, Pour-over Glass Coffeemaker)
... along with a stainless steel filter. Can also use paper or cloth ones.
(Able Brewing Kone Coffee Filter for Chemex Coffee Maker - stainless steel reusable).
It takes a lot of time carefully pouring the water not too fast, not too slow, and a gooseneck pouring device makes this a lot easier.
But French press is better. I now have one which is totally stainless steel.

Electric Kettle, no plastic in contact with the water:

I am not a big fan of plastic in contact with very hot liquid.

We've been happy with our Ninja. Makes single cup, travel cup, half pot or full pot with reusable filter.

As an alternative, consider cold brewing. I can make 6-8 servings with a 2-quart mason jar setup, brewed 48 hours in the refrigerator.

I cold-brew using a 2-quart Mason jar with a stainless steel mesh filter as well. The thing is, you don't have to use "cold" water to cold-brew... that just makes it take longer. You can use hot water, just not so hot that the grind cooks and acidifies like a standard brew would. I just fill the jar with water as hot as will come out of the tap. This will cut your brew time down to about 12 hours and it will taste identical to using cold or room-temp water.

Have had a Ninja machine for several years now. As noted, it makes a cup, travel cup, half or full carafe, and we've used all the different settings at different times. I do use a Baratza burr grinder to grind the whole bean coffee first, but otherwise this is a real simple way to make various sizes of coffee. America's Test Kitchen has consistently rated the Technivorm MoccaMaster as the best coffee pot out there but it is pricey. We have the half price runner up, the Bonavita coffee maker and it consistently turns out great cups of coffee whether it be one cup or eight cups.

We have the Mocca Master. Its the full size. Yes - pricey, but it does make excellent coffee. It does so because it adheres to the SCAA standards, which are very similar to the temps/contact time for pour over. If you want to spend even more money, however, you could look at a Jura. Buy a refurbished one. But it makes the best coffee I've had to date, including lattes, cappucinos, macchiatos, and flat whites. While it makes single cups only, if we travel, I simply put a thermos under it and have it make 2-3 cups of coffee into the thermos.

I’ve tried many coffee makers; the MoccaMaster stands the test of time. I bought my son one as an apartment warming present. It does what it’s supposed to do, every time.
I get the FI part but not the RE part of FIRE.

We have family in Italy who just bought us a Moka Pot (they are very cheap). For someone who likes strong coffee, it is great, and I like it better than our Bonavita coffee maker. It makes 12 oz. or so of coffee.

I've been using this one. It makes "4 cups" which is really about 2 cups.

Get a $15 Electric Kettle. Make any size you want 6oz to 20oz.
Melitta has a bigger version if you want to make a "pot".
Easy process (when you have a bit of time) and makes great coffee.

I've been using this Hamilton Beach single serve for years - washable metal screen filter, so no need for plastic pods, etc.
Makes 16oz max and perfectly fits my 16oz vacuum insulated Contigo under it.
