Good article in Harry sit’s blog on why one might want to stick with the default options with I Bonds.

Agree with Harry about sticking with the default (tax-deferred for up to 30 years). For most folks, that tax deferral is another great benefit of I Bonds, tax shifting from a high tax bracket to when you're retired (or temporarily unemployed) and possibly/probably in a lower tax bracket.
